The Chester blackberries in this supreme soda are from Ayers Creek Farm in Gaston, Oregon. The Chester is a late ripening variety, and the flavor intensifies as the season progresses into the cool nights of autumn. The variety does not lend itself to machine-picking, so is a very special and unusual to find anywhere but fresh at the Farmer's Market.
Organic field management utilized at Ayers Creek Farm brings out the best qualities in the fruit. The extra large berries are the result of good weather during the bloom period and lots of busy bees.
